If you want to up your Jerk game then you need to give this a go!
It’s a no brainer that sweet and spicy go incredibly well together, they are a fantastic combination. There’s something exciting about being comforted and almost soothed by the sweetness, as you feel the spice creep up on you!
It may seem a little sugar heavy but in this recipe the sweetness is just enough to not be too sweet and to let the spice from the scotch bonnet still shine through.
I use this as a glaze after I’ve done my jerk chicken, fish or vegetables in the oven or on the BBQ, but you could use it as a glaze to coat wings, use it as a drizzle to take your salad to the next level or even have it on the side as a dipping sauce.
When I’ve used it on anything that I’ve already marinaded and cooked using the dry jerk spice mix, I smoother this on at the end and pop it back in the oven for the sugar to really crisp it up!
3 tablespoons honey
2 tablespoons dark soy sauce
2 tablespoons brown sugar
2 teaspoons of Myristica’s Jerk Spice Mix
1. Mix all ingredients together
2. Smoother over the ingredients that you have decided to jerk when they are fully cooked and leave in the oven, BBQ or air fryer for a further 5 minutes until you see it start to bubble. Just let it cool slightly before tucking in.
