CARIBBEAN STEAK WITH A HERB, GINGER & CITRUS DRESSING RECIPE


Who doesn't love a good steak?! Give me a nice cut of ribeye seasoned with salt and pepper seared in a nice hot pan or on the grill and I'm happy! Sometimes though, I fancy jazzing it up a bit and this has become my go to for a steak with a little Caribbean twist!
Meat cooked over flames has such a beautiful and unique taste and as soon as I smell a BBQ going, it throws me back to being on the island and seeing the pillars of smoke dotted throughout the lush green rainforest knowing that meat is being grilled and a community is gathering amongst the food and grill. Steak isn't necessarily a huge deal in the Caribbean, locals much prefer grilled chicken, but lets face it, we love a good steak here in England and theres nothing wrong with having the best of both! So, if the weather is nice and you feel like having a BBQ then why not try this out?
Seasoning the meat with Myristica's Everyday Caribbean Seasoning which has paprika, garlic, allspice, onion & chilli amongst other ingredients help to really jazz it up and make an already great piece of steak even better!
The citrus fruits used help make the meat deliciously tender and all of those fresh herbs and seasonings really give the steak a real fresh and clean taste.
This is a really easy recipe as you basically just chop everything, mix it altogether and drizzle it over your steak so there's no reason not to give it a try!
I always recommend buying the best quality cut of steak that you can afford. That may not always be the most expensive, but grass fed, free range and British are some key things that I look out for as I really believe that you can taste the difference.
If you haven't tried out ribeye before then I suggest doing so! Look for a nice piece which is marbled with thin streaks of fat. This fat melts away when cooked and adds to the delicious flavour that ribeye has! 
I like my steak pink but of course you can cook it to your preference by leaving it in the pan for longer or less on both sides before removing and letting it rest.
 
Ingredients
2 ribeye steaks (at room temperature)
2 teaspoons of Myristica's Everyday Caribbean Seasoning
Salt
Cracked black pepper
4 sprigs of thyme, picked
1 Spring onion (dark green part only) finely sliced
1 teaspoon of ginger, peeled and finely grated 
1 tablespoon of shallot, finely chopped
1.5 tablespoons of Parsley, finely chopped
1 tablespoon of mint, finely chopped
1/2 a lime zested and juiced 
1/2 pink grapefruit, juiced
1 teaspoon of lemon juice
Scotch bonnet or red chilli to taste
 25ml Olive oil plus extra for frying the steaks
  
Method
 
1. Season the steak with Myristica's Everyday Caribbean Seasoning, the picked thyme, a little salt, cracked black pepper and leave it to marinade for at least 20 minutes 
2. Whilst it marinades combine all other ingredients together and stir well. Add a little salt to season it.
3. Get your non stick frying pan nice and hot and drizzle with a little olive oil.
4. Fry your steak for about 3-4 minutes on each side in your nice hot pan.
5. Remove your steak from the pan and allow to rest for about 5 minutes before cutting.
6. Dish up and drizzle with the herb, ginger and citrus dressing!
